Easy weeknight dinner

It is so hard to thinking quick weeknight dinners, so I’ll make it easy for you: copy this one!

Chips and guacamole
Soup (i used TraderJoe’s organic butternut squash soup with a dollop of herbed goat cheese)
Turkey melts with roasted peppers

To make the turkey melts:
I spread my amygdala almond spread instead of mustard and mayo, but pesto sauce or even Italian dressing would be great as well. Then add provolone cheese, roasted bell peppers (you can buy these jarred or make your own), sliced turkey breast, and anything else you like {asparagus, arugula, artichoke hearts, things that don’t start with “a”…}

Voila!
