I made sweet potatoes for baby j. Delicious and nutritious! This was his second food and he was so happy eating it!
It was easy, too!

Pierce the potatoes and place them in your chosen baking dish. Roast at 450 for about an hour. Allow to cool enough to touch them. The skins should be basically separated from the pulp. (note: turning them once while cooking should help the skins separate completely.) Remove the skins. Now you can just mash with a fork and he done, but as he is new to eating, I ran them through my food mill fitted with the smallest disk. I stored what would be a 5-day supply in a reclaimed spaghetti sauce jar. The rest I froze in 1-oz. ice cube trays and then freezer bags with the date for future food mixing.
Note: you aren’t supposed to freeze glass unless it says “freezer safe,” and a reused container is not that. 🙂

For his first try, I mixed it with the oatmeal he had already eaten.
He loves it!
