Greek Night
I have posted some of these recipes before…but this is a great weeknight dinner! Start with a Greek salad: lettuce, cucumber, beets, feta cheese, tomatoes, kalamata olives, red onion if you’d like, and Greek dressing (you can also use Italian in a pinch.)
Move on to hummus (store bought) with pita squares and carrots. I topped ours with beets because they are so good for you!
Gyros: this recipe is a “cheat” from my Cooking Light book and is simple and delicious, but not “real” gyro.
Falafel: I bought frozen falafel from Trader Joe’s. Did not love.
Tzatziki sauce: I usually make this yogurt-cucumber-dill sauce myself, but wanted to try TJ’s. It was good! You can’t go wrong with tzatziki of course. 😉
Rice: white rice with a bit of olive oil, dill, oregano, and lemon juice.
Try it!

I know I have been slacking on these but I’ve been SO busy! I have some great posts planned, though! My guy is turning SIX MONTHS OLD soon! He started to eat solid foods! I have a DIY tutorial for some great hairbands I made. I also have a review of a home gel manicure kit I got for my birthday! and recipes…I have recipes! So come back and I’ll try to do better. 😉

Happy birthday, dad!
This is a big one.
I can’t believe this handsome man is 60! He really looks great. I hope I get that part of the DNA!
In actuality, my dad really takes great care of himself. He works out and is in fantastic shape and eats well. If that is the key to longevity…wait I forgot to mention Jack Daniels. That has to be the key. 😉
This man would do anything for his kids. His love knows no bounds. Thank you for the innumerable life lessons, which I soaked up eagerly and have never forgotten. If you are happy with the way I turned out, please know it is to your credit.
