Dinner

I have been cooking away! I know it’s hard to think of what to make every day at some point i should post about my system of meal planning. It makes life a lot easier and more delicious! Some recent meals and recipes if you need ideas:

Oven-fried buttermilk chicken and Hungry Girl Mega Mac and Cheese.
The chicken is marinated in buttermilk ad then battered twice in flour, cumin, salt and pepper. The HG Mac and cheese (from the dr. Oz show) was a FAR cry from mine–healthy or not!

Southwestern falafel with guacamole with corn soup and spicy grilled sweet potatoes. The falafel recipe is from Cooking Light and invokes mashed pinto beans, corn chips, and cilantro (among other things). The sweet potatoes, also from CL, are my new favorite dish! Thinly sliced peeled sweet potato grilled on a grill pan coated in canola spray. Toss them in olive oil, cumin, garlic, S and P before and after grilling. Yum!

This one was fresh rolls, spinach and basil marinara, and an herb salad with red cabbage, avocado, and home made herb buttermilk ranch.
I’ve been trying to cut down on store-bought salad dressings; the health benefits alone are staggering. Also, home made dressings taste a lot better! I made this ranch in less than five minutes and it was delicious and health-conscious. Here is the recipe, although as usual I didn’t measure anything:

Herb Buttermilk Ranch dressing
Place about a tablespoon of mayo, around a cup of light buttermilk, and some lemon juice in a blender or food processor. Throw in some garlic (fresh, minced or crushed), S and P, then add whatever herbs you feel like (read: whatever you have). I used green onion, basil, and cilantro. Let it sit in the fridge to thicken a bit. Enjoy! You can also use Greek yogurt in place of mayo (I used a canola-oil mayo substitute) or even sour cream and maybe some vinegar if you’re missing the “tang” that mayo provides. This basic recipe can also make other creamy dressings, like blue cheese. With yogurt and blue cheese crumbles in a blender you have your base. Stir in some black pepper and more crumbles an you’re done!

Baby food

With all of the expense and uncertainty of canned baby food, I am planning on making as much of baby Jacob’s food as I can. the latest news is telling us that apple products can contain arsenic and there are other warnings…also I would like to eventually get into a habit of serving him what we are eating, so I’ll need to know how to do it myself. I made my first foray into the world of baby food today!
I will be starting Jacob on solids I about a month. He will start with oatmeal, and as he ventures into fruits and veggies I want to be prepared. I decided that with the time I have until he eats produce, I should get started. Each time I go to a farmers’ market I’ll get one fruit or vegetable to prepare for him and freeze. Sunday I bought organic Fuji and pink lady apples. Today I christened my new food mill (thanks, Linda!) with apple purée. It was really fun! First I cooked the apples, skin on. Then I worked them through the mill using the disk with the smallest holes. I added back in some cooking liquid to thin it out. Lastly I portioned it into these great reusable baby food jars. They are freezer, microwave, and dishwasher safe and have screw-on lids so they can be tossed in a diaper bag. (thanks, Bree, Erinn, and Morgan!)

After the apples, I made mashed potatoes for dinner in the mill. You don’t have to peel anything, which is great for those of us with carpal tunnel!

Hiking

Josh saw a snake on Thursday that had him spooked. Friday on our hike we had a few false alarms and then the real thing: a rattlesnake.

Strangely, he saw five snakes in four continuous days. He saw another while riding Saturday and another riding Sunday and then we encountered one while hiking Sunday afternoon. Weird!

5 Months Old!

I know I say this every time but I just can’t believe my sweet little guy is 5 months old! Could it have been 5 whole months ago that we were meeting him for the first time?

 

I suppose I also always tell you how much I love him, but I really do…I manage to love and enjoy him more each day, if you can believe it. This is a really fun age* because not only is he entertaining, he’s getting easier to care for, which is a nice combination.

He loves to put anything near him into his mouth, and now that his hand-eye coordination is really great, he snags things up in a heartbeat. My fork, a handful of food from my plate, a piece of paper, anything really…and SHOVES them into his mouth right away. He has chewed on my face, Josh’s nose (that was a funny one!), anyone’s clothes, a Godiva bag…I could go on.

After months of drooling and hand-chewing, I think I can feel a tooth poking up from his bottom jaw. He loves to crinkle up paper and sing very loudly to it while he chews on it. It’s very funny. He’s generally very loud. He shrieks and squeals while he’s playing, and sings himself to sleep with a loud, receptive sound that I call “the sleep song.” He is still making raspberries and humming sounds, but continues to add sounds to his repertoire daily. 

He’s a very squirmy baby! We call him the squirmy worm. He’s extremely physical and will climb all over me as though I were a jungle gym. When he’s on the floor, he scoots sideways and moves all over the place. It’s actually kind of scary! He can roll from front to back, and almost from back to front. In fact, I’m sure he could do it, but he doesn’t know he can, and that’s fine with me. The more mobile he becomes the more work I have!   He is very strong. He can hold himself upright in a sitting position, but can’t balance like that, so he’s not sitting up quite yet (again, fine by me!). He grabs his feet and puts them up on everything. He wraps them around the bars of the play gym and sticks them out of his car seat. When he gets excited, he straightens his arms and legs and it cracks us all up. He’ll straighten his little legs and make a serious face and then let out a loud squeal as though he was working up to it for a while. 

He’s facing forward in his stroller without the car seat now, as you’ve probably noticed in pictures. It’s really different for me, as I can’t see him, but he’s so happy to see the world around him. He likes the stroller a lot more this way!

We’re still baby carrying most of the time, and loving it. It’s his favorite place to fall asleep. He still fights naps, and I try whatever tricks I have to sneak them in for my own good and his.

We are one month away from solid foods, which is exciting, and I have been making some baby food to prepare. I do worry he’ll be actually crawling soon, as he can move quite a lot in an army crawl fashion. He has the cutest laugh and nothing makes me happier than to hear it. He loves to smile at anyone who comes near, and has become quite popular at Josh’s bike races. 🙂

Every day is a gift. I see him grow and learn each day. He reaches for me now, which is so beautiful for me.
