Josh’s birthday

For Josh’s birthday we celebrated a few times. I gave him. “birthday week.” to cap it off, we made a Chinese dinner on Friday night (I planned on cooking it but Jacob was fussy so Josh sadly made his own special dinner.) Saturday, the three of us went to TAPS in Brea for dinner and a special dessert. Sunday we had a BBQ at Jeff and Linda’s with both families and both grandmas. Very fun!

2 Month Checkup

We had the two month checkup for baby Jacob on Friday. He did very well! He weighs 12.6 pounds! He is in the 70% percentile for weight, and the 75% for head circumference. Hehe. I knew that was a big noggin! He is right on track for his developmental goals most of which are things I work on with him, like tummy time/holding his head up, social smiling, following a toy with his eyes, and cooing in response to my voice. The doctor was really happy with his progress. He had his first three shots, and of course he cried (screamed, actually) but I was able to calm him down and we had no negative ramifications.

Ice cream cakes

For Josh’s birthday – post forthcoming – I made two ice cream cakes. Josh doesn’t like cake, so this is more his style.

I invented these recipes with inspiration on the second one (which I’ll explain) just based on what seemed like it would taste good! My one note is that, in the future, I wouldn’t use whipped cream on the edges as it immediately melted and started to slide off the frozen top of the cake. I’m still not sure if this is because I bought cheap whipped cream (I mean, it’s one ingredient; how can it ย be different?!) or what. It defies logic. Anyhow…

The first cake, which I’ll call “the Josh” can be seen below.

From the bottom up it was:

Chocolate cake, Reese’s peanut butter cup ice cream, a layer of crunchy peanut butter (if you know Josh, you know he loves ice cream with peanut butter mixed in), another layer of chocolate cake, fudge frosting, peanut butter chips, whipped cream, and reese’s cups.

The second cake I called “Banana Sundae”

From the bottom up: Oreo crust, bananas, strawberry ice cream, chocolate sauce, chocolate cake, vanilla frosting, whipped cream, chocolate sauce, cherries, sprinkles (and nuts for a garnish–not shown).

And of course the funny candles and the birthday boy blowing them out! I think he really liked his cake. ๐Ÿ™‚

Yum yum yum. I have this love of frozen banana. It tastes so good to me. I would have loved this cake with just frozen banana and strawberry ice cream. Overall, if I made these again (which I think I will) here are my notes: buy more ice cream. It takes a LOT. Maybe simplify each one. There was a lot going on and in some ways it was very overwhelming. One cake box will yield 4 layers of cake, so it’s ideal to make two cakes at once. I would probably add a second layer of vanilla instead of a flavored ice cream to each cake just to bring the flavor overload down a bit. But they were both amazing!
